There
are two key areas that need to be addressed when speaking about storage.
All tomatoes must be kept in facilities that adhere to "Good Manufacturing
Practices" as stated in the Code
of Federal Regulations Title 21.
The
second key area is Temperature. Tomatoes must
never be kept BELOW 52
DEGREES. Chilling tomatoes destroys
the flavor and ruins the shelf life.
Tomatoes
that have reached their full ripeness should be stored between 52 and
55 degrees. Tomatoes, that are not fully ripe, should be stored from
55 to 72 degrees (room temperature) to allow for the ripening process.
